Coconut and Raspberry Bread

Syrie Wong Kaew has her philosophy by saying "the berries add a lovely tartness to the bread and help to balance the rich coconut flavor".

After I read her own words then I decided go for it by making it. Amazing- it does "marry" magnificently! As you can see those flakes of coconut while slice a bread on that picture. If you love coconut and raspberries then it's a perfect bread for you!!!

Here's the recipe:


2 large eggs
1/3 cup milk
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
2 teaspoons baking powder
2 teaspoon cinnamon
1 cup gratulated sugar
2 cups unsweetened shredded coconuts
5 tablespoons unsalted butter, melted
Fresh or Frozen raspberries

Preheat the oven at 350 degree and spray your loaf pan with the cooking oil.

In a bowl, whisk together of eggs, milk and vanilla

In another bowl, whisk the flour, baking powder, cinnamon, sugar and coconut altogether.

Pour the wet ingredient into the dry ingredient and mix it altogether until it's all combined. Then add the melted butter to mix it a little bit- don't overmix it.

Pour the batter into the loaf and bake it for an hour by using the tooth pick or a knife that comes out clean after inserted in the center.

Let the bread rest in the loaf for couple of minutes then remove it to the wire rack to cool completely.

You can smear it with butter and jam! :D

Raspberry Lime Bread

Can you smell the aroma of raspberry and lime under your nose? Darn, I wish!!! It smells so good!

It caught my eyes while I was reading other blog - Baking Sheet about this recipe.. I decided to try this by following this recipe. It was so delicious!!

As you know that berries are back in season so perfect opportunity to make it.

I had learned something about raspberries- you can use fresh ones but frozen raspberries are better because it can hold it up while baking a bread. I use the frozen raspberries and look what it came out beautifully in that picture.

Here's the recipe:
2 cups all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 large egg
1 1/2 teaspoon vanilla extract
3 tablespoons vegetable oil
1 tablespoon lime zest
*I added the whole 1 fresh squeezed lime juice after zest the lime for more flavor*
3/4 cup milk
1 1/2 cup raspberries, fresh or frozen

Put the wet ingredient into the dry ingredient and mix it until it's all combined and smooth. Fold it with the fresh or frozen raspberries and pour it into the loaf pan.

Bake it for an hour or the toothpick or a knife comes out clean after insert it in the center.

Turn loaf out onto a wire rack and cook completely before slicing.

SBALT with Lemon Dill Mayonnaise and Lime coconut watermelon balls

Remember B L T ?! Bacon , Lettuce and Tomato!!

I wanted something different but related with BLT of course! I thought of having shrimps and avocado something spice up to throw in altogether with the traditional BLT.

I want something zesty and bold taste of the mayonnaise so I added fresh squeezed lemon juice and dill to mix up with the plain boring mayonnaise..

Watermelon is back in the season!!! My eldest daughter really LOVED the lime coconut watermelon balls even pour all of those juice on her watermelon balls!

Lemon Dill Mayonnaise:
1 fresh squeezed lemon juice
chopped real dill or dried dill (couple of dashes)
1 or 2 big scoop (s) of your favorite plain boring mayonnaise

Mix it altogether until it is firm and put in the refrigerator while you are cooking the bacons and shrimps

Lime Coconut Watermelon balls
1 fresh squeezed lime juice
Couple of dashes of unsweetened shredded coconuts
Fresh watermelon to cut in half and use the ball scooper to scoop it as "balls"

Mix the watermelon balls with the fresh squeezed lime and shredded coconuts. Let it sit for a while to absorb the flavors.

SBALT
A carton of shrimps- either cooked or raw as your choice
* if raw- cook it completely!! If cooked- just warm it up*
1 Avocado- finely sliced
Couple strips of cooked bacons
Romania Lettuce
Rome Tomato- finely sliced

Any bread of your choices- I picked the big dinner roll from the bakery department because it would hold it better..

First spread the lemon dill mayonnaise on the both rolls. Assembled it with lettuce on the bottom roll then tomato, then avocado then pile it up with some shrimps then put two strips of bacon then lastly top it with the top roll (to make it as a sandwich).

You can double it depending how many people to serve.. This one serves 1-2

It's a perfect to dine during summer :D
