Roll up Lasagna Florentine






Roll-up lasagna sounds so brilliant to me! I don't want to do the ENTIRE lasagna. The entire lasagna is good enough to feed the entire army!

So I thought of why not to roll it up and have a simple lasagna to dine without feeding it to the entire army! I know that I had said twice! :D.

When you cook the lasagna completely then you want to dry it off on the clean kitchen towel for a little bit. It makes it
more easy to spread out the fillings and roll it up by no problem. If you don't dry the lasagna completely then you will have too much hassle with the runny and watery ones that won't able to roll it up.

Ingredients:
1 box of frozen spinach- you want to squeeze the water out or use fresh spinach (cook it wilted and blanched it)
1 small oz of ricotta cheese
1 whole yellow bell pepper, finely chopped
1/2 of sweet onion, finely chopped
Couple of shredded carrots
Italian or Mozzarella shredded cheese (one bag)
Salt and Ground Black Pepper

Depend on how many people you are serving.. If you are serving for 4 people, then use 2 individual lasagna each (meaning 8 of them). A box of uncooked lasagna- DON'T buy those oven-typed lasagna.

Spaghetti sauce of your favorite

Above what I had mentioned about cooking the lasagna first then dry it off. While you are cooking the lasagna- why not to mix all of the ingredients like ricotta cheese, vegetables, salt/pepper and handful of shredded cheese (SAVE some for toppings).

When you get the lasagna dried up, spread out the fillings on it and start to roll it up. On the baking pan, you want to pour a little bit of the spaghetti sauce and little bit of shredded cheese. Place the roll-up lasagnas flatly and repeat with rest of the lasagnas.

Pour little bit of spaghetti sauce on the top and sprinkle with the remaining shredded cheese. Bake it at 350 degree for like maybe 20 to 30 minutes or until the fillings are completely cooked inside.
