Raspberry Lime Bread

Can you smell the aroma of raspberry and lime under your nose? Darn, I wish!!! It smells so good!

It caught my eyes while I was reading other blog - Baking Sheet about this recipe.. I decided to try this by following this recipe. It was so delicious!!

As you know that berries are back in season so perfect opportunity to make it.

I had learned something about raspberries- you can use fresh ones but frozen raspberries are better because it can hold it up while baking a bread. I use the frozen raspberries and look what it came out beautifully in that picture.

Here's the recipe:
2 cups all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup sugar
1 large egg
1 1/2 teaspoon vanilla extract
3 tablespoons vegetable oil
1 tablespoon lime zest
*I added the whole 1 fresh squeezed lime juice after zest the lime for more flavor*
3/4 cup milk
1 1/2 cup raspberries, fresh or frozen

Preheat the oven at 350 degree and spray the cooking oil on your loaf pan.

In a bowl, whisk together flour, baking powder and salt.

In another bowl, whisk together sugar, egg, vanilla extract, vegetable oil, lime zest and fresh squeezed lime juice until smooth.

Put the wet ingredient into the dry ingredient and mix it until it's all combined and smooth. Fold it with the fresh or frozen raspberries and pour it into the loaf pan.

Bake it for an hour or the toothpick or a knife comes out clean after insert it in the center.

Turn loaf out onto a wire rack and cook completely before slicing.
