Green Chile Turkey Salad

Enrich in high Vitamin C! Yea, baby it's so true! It does clear up my nose system.

When I first moved to NM and learned to love those "christmas" chiles- RED AND GREEN.

If you never had those chiles then strongly encourage you to TRY this. You will find this amazing flavors if you did tried this.

Recipe:
1 carton of ground turkey (approximately 1 lbs or so)
Any lettuces of your choice, I picked romaine lettuce
1 red tomato, chopped
Some of small yellow tomatoes, chopped
1/2 of white onions, chopped
Handful of fresh cilantros, chopped (save some for the topping part)
1 jar of green chiles or chopped fresh roasted green chiles. (Save some for the topping part)
Any tortilla chips of your favorite (I use blue corn tortilla chips)

Cook the ground turkey fully and drain those greasy liquid. Put it back in the same pan that you had cooked and mixed it with the green chiles. If you have those fresh green chiles, then you can roast it until it becomes black and soft, then peel it off and chopped.

Assemble those salad with the lettuce, tomatoes, onions, and cilantro. Crush a few of the tortilla chips then top it with the green chile turkey mixture on it. Sprinkle some of the cilantros and green chiles. Place 3 or 4 tortilla chips on the side.

So was it hard? NAH it's not! It's a great summer meal. If you are not crazy over the ground turkey then you can replace it by chopped cooked chicken or ground beef. I prefer ground turkey over the ground beef because it's more lighter and it's a great way to avoid eating red meats as well :)

Heirloom Tomato Salad

When I was doing a quick food shopping at the local supermarket and it caught my eyes on that heirloom tomatoes. I was doing a silent hippie dancing and say myself "YES YES". Who cares if people would think that I'm so crazy! LOL.

I have been WANTING to try those heirloom tomato salad but hard to find those heirloom tomatoes until I saw it like last week or so. I was so thrilled to gather red, yellow and green heirloom tomatoes. If I haven't find this, I would probably order those plants to grow it for myself.

It's pretty simple to make this. All you need was variety colors of heirloom tomatoes (cut into the wedges), thinly sliced of red onions and chopped handful of fresh cilantros. Mix it up and drizzled it with olive oil and season it with sea salt and freshly ground black pepper..

That's ALL That's ALL. That's why I love about cooking :D.. It's not too complicated! Whoo!

Shrimp Ceviche

Do you ever like eating shrimps? Are you a shrimp-lover? Willing to eat or try those shrimps? This recipe may be good for you to try this.

Can you image having shrimp mixed with jalapeno, cucumbers, corns, and red onions mixed with the acid juice (lemon and lime) and little bit of tomato sauce? I can I can! It's so good and healthy (and very light too)

It's a tradition Mexican dish. Usually they make it as a seafood ceviche including those fisheries, shell fishes and many mores. It comes in variety of flavors. Some mexican add couple of dashes of hot spicy juices into that. If you want more SPICER then you can add couple of dashes of hot spicy juice in your dish. It can look like "salads" or into a cocktail style by adding mixed of tomato sauce and hot spicy juices.

Recipe:
1 carton of raw shrimps
1 cucumber (you can either use regular or english ), chopped
1 avocado, pitted and chopped
handful of fresh cilantros- chopped
1/2 of red onions, chopped
1 jalapeno, chopped
2 fresh lemons
2 fresh limes
1/2 bag of frozen corn or 1 or 2 corn on the cobs (cut it out from the cobs)
1 small can of tomato sauce

Cook those raw shrimps until it becomes pink and the tail becomes curly. Chopped those shrimps into the bite-sizes.

Chop rest of those vegetables. For the corn part, if you plan to use frozen corn, thaw it for a while (don't need to cook it). If you use the corn on the cobs, cook it as regular then cut it off by hold the cobs to get those corns.

Squeeze those lemons and limes. If you can't handle too much acidity then you can reduce by having 1 each of the lemon and lime.

You can leave those cooked shrimps with the acid liquid overnight for MORE MORE flavors.

Mix it all up altogether except those one small can of tomato sauce. For the tomato sauce, you can use it all up or half of it depend on your taste bud that will takes. For me, I poured 1/2 of the tomato sauce.

This would be a GREAT summery meal and which it is more that it's very light! :D

Blackberry Lemonade

Blackberry Lemonade....

Two friends of mine had joked me that I actually dropped a blackberry pager into the lemonade and other would make iPhone Lemonade.. I think it was so hilarious about this! HEH...

Since summer is here around in the corner so it's perfect timing to make lemonade. I wanted to add something more flavor for the lemonade. I thought of adding mashed fresh blackberries. It tastes so GOOOD! There are many ways to make "-ades" like lemonade, limeade, orangeade and many mores.. I will think of those delicious lightly drink coming up. I had made limeade before and it was very good- if you haven't then I will create this drink recipe coming up soon.

All you need was 2 fresh lemons, water, a small carton of blackberries and granulated sugar.

Squeeze 2 fresh lemons- discard the seeds and pulps. Pour the lemon liquid into the pitcher. You can even add more lemony by adding 1 or 2 more fresh lemons.

For sugar- I for myself usually add 1/2 cup of sugar because I want to to enjoy the drink with less sugar. You can add 1 cup of sugar if you prefer "a little bit" more sugar in your drink.

Mash blackberries to make it as a "puree".

Mix it altogether in the pitcher and fill it up with the water.

It's really SIMPLE to make it.. Not that tooo hard! :D...
